The chef at Hotel Kernen Gstaad-Schönried
Over the course of many summers at Stierenseeberg, I have watched many wild animals as a child and a cook. In the summer of 2012 I was able to accompany a local hunter on the Gemsjagd. I was very impressed with how respectfully he moved in the wild and treated the animals. Carrying the hunted game filled me with pride. It just made me feel so humble.
During my training and work at Hotel Kernen, it has been my pleasure to have lots of interesting encounters with many international guests. I have been able to learn a lot about their values and standards, but also get to know their eating habits. I remember in particular the guests who brought their instant soups from their own country. I was astonished when they told me what they wanted. With a smile on my lips I fulfilled this culinary request and prepared the soup just as they wanted.
I enjoy spending my free time with my family on the nearby Alp Fromatt. Working on the alp, the animals in the mountains, the hiking outdoors and watching wild animals give me the ideal time to relax, refuel and enjoy. So many game dishes and menus in this book or on our menu in Hotel Kernen were created in the process.
